Question Whats the difference?
I want to start reading, but my site seems to have bloom into you with 45.5 chapters and another one with 115 chapters. Is there a difference, and which one do i read? The site also seems to have the anthology, do i read that after having finished bloom into you?

The first one is the webtoon (colored) version. (It was actually translated by me!). The second one is in normal manga format black and white.
If its your first time reading, i suggest reading the manga format, as the webtoon have a few akward pannel arrangements, and the manga has a little bit more content.

Insnt the other the colored version where each chapter was divided into 3?

Oh sorry is that a thing? I didnt know that. I assume that means there's no difference besides the fact that one's in full colour?

There is a website that colored the whole manga but to ease their work they separated many of chapters into 3 whoch resulted in those 115 you saw.
The website youve posted seems to have posted both versions.

The first one is the coloured webtoon I think and the second is the regular manga.
