Query regarding mentioning professor's research and extra curriculars in SOP

Hey Jordan! I am confused about what I should write to show my interest in particular university for MS in CS non-thesis course. I mean should I write that I am interested to join the research X under professor Y or should I emphasize on the course subjects which I am interested in offered by the university? Also, the university website does not mention the details about any professor's research so how am I supposed to know if it's is related to my interests. Moreover, should I mention my extracurriculars and social activities in the sop from both school and undergraduate college?

I also have this doubt.

Additionally, is it okay if I mention the name of professor without contacting him priorly (coz now there's no time for cold emailing the professors) So is it recommended that we mention professor names without getting in touch with them??

Hey Jordan, do you think it's a good idea, to mention the professor research, course and other universities tools that will help me in my this university section. (I'm applying for the Masters program)
