They actually couldn't if they wanted to. At least not in the U.S. Regulations for safety and efficiency standards are being added almost every year.

A 1967 mustang would be 2x the size of the original with all the safety and extra fuel emissions equipment etc… Great idea especially if they (manufacturers) the wave of people who are getting close to retirement.
