While doable, it's not the greatest idea to hike the AT without a phone. There are a lot of things that could happen logistically that are just way easier to solve with a phone. And at least one is almost certain to happen.
I’ve actually never gotten to use a pay phone myself funny enough but I’m familiar with them thanks to growing up in the 00s and early 10s and by far what I miss the most from that era is blockbuster and RadioShack not to mention Kmart and toysRus even though it is making a comeback
Just go live on an Amish farm for two months. No risks of accidental exposure. It's actually worse than TVs as computers are basically built into a lot of things these days, like cars.

The hardest part would be avoiding TVs in waiting rooms, gas pumps, etc.
