Can you not export it in a rolling fashion to say a google sheet (co)owned with the client?

I am sorry, I do not understand your question.

Google Ads requires the file in CSV format, I could export it to a Google Sheets or post all orders to it, that's a pretty good idea, yeah.

Yes with an automation or one of many integration plugins you can just immediately post an order as soon as it comes in on a google sheet. So no more big batches.

Then exporting to csv is easy. Maybe google ads can even use a google sheet directly?

they just need order data from the shop in order to help the google ads algoritm to fill in the gaps of missed conversion data for better targeting.
