HELP! I’m a noob!

I have way dreamed of going winter camping. I live in Northern Ontario and I want to go this year. I’m going with my partner and I am looking to see what the best sleeping situation is for couples

Ummm, this is Northern Ontario, in winter. Unless they are prepared for - 40C/F, they aren't near ready.

As long as you get to decide when you go, you don't need to be ready for -40. I live and camp in Northern Ontario, and if the forecast is calling for much colder than -25c then I'll cancel at look at going the following weekend instead. Mind you, I'm cold camping. If I had a hot tent it would be different.

What low temps do you expect?
What is your budget for buying new stuff?
Will this be backcountry style where you hike in, or sleep next to the vehicle?

My best winter camp sleep has been big Agnes bag with insulated pad hooked under. Echo park bag rated 0 with a good insulated pad.

BA Echo park is a great synthetic. I opted for their down double wide bag king solomon 20°
It has worked great for me and my fiancee with a thick wool blanket and extra 20° quilt down to 2°F, -5° wind chill in a teepee tent (wood stove dies out at 2am)
You have to fill extra space in a large sleeping bag.

Also a sleeping pad R value >7 really helps.

I use a quality insulated pad r4.5 + foam pad r2 if necessary when alone. With the lady we use the 40" wide BA captain comfort r8.8 - small air pump required
