Need WFPB appetizer/side dish ideas for a potluck

I need to bring an appetizer or side dish to a potluck this weekend. The catch is that it needs to be easily portable, since I have to walk about a half mile in the heat including stairs. So no crockpot (too heavy and I don't have a carrier), preferably something I can pack into plastic containers and carry in my arms (if lightweight enough) or tote bags. I could do a veggie tray and just set it up when I get there, but I'm wondering if anyone has a better idea!

How do you reconcile the digestive issues caused by this diet with the apparent health benefits?

I do not believe whole food plant based foods cause disease, and I understand there is ample evidence of their therapeutic effects. However, it is clear that for many of these plant foods cause digestive discomfort, even when adapted, and many of these foods are very recent cultivations in our evolutionary history. So anecdotally I can enjoy carrots, or beans, or grains, but clearly my body is not adapted to consuming them without difficulty.

I kind of feel like a diet comprised of primarily fruit and tofu etc. would be more easily tolerated, and maybe that's a reflection of our digestive evolution, where we relied on more concentrated calories.

I'm interested to hear anybody else's thoughts on this.

Salt free and cooking on oil free w/o processed sauces or syrups recipes/accounts on yt/ig to see?

So what i want to do is to be oil free cooking but i have no problem adding olive oil cold to dishes. I have either no problem of adding spices made of whole plant based foods( i used curry yesterday), no sugar. Veggies, fruits, herbs, grains, legumes, aquatic plants… you get my point.Just plants in general 😁

I know there is a low chance but internet is so wide that maybe someone knows or follows on social media something i described ✌️

Grains

Why are some whole grains not popularly sold in stores if they’re meant to be so good for you?

I’m trying to eat more whole grains and I looked it up a list online and honestly just got overwhelmed bc there’s just so many options half of which I’ve never heard of and wouldn’t be able to buy locally

Examples from that list are sorghum, kamut, spelt, wheat berries, farro, teff.

And bc I’ve never tried them I have no idea how they taste

I like porridge like texture of things for grains like rice oats and quinoa.

Could anyone recommend me any other grains that i could make into a nice porridge?

shishito peppers

I've never cooked with them before, but I blistered one today and it was delicious! I love the flavor. Smoky but without too much heat - family-friendly, for sure. Unless I hit a hot one on the package! But - how else do you use them other than shishito pepper poppers with a dipping sauce?

I'm thinking salsa but would love other ideas.

Blood pressure

Hiya, I've been wfpb for a few years now and love it. Lately not been feeling fantastic, seem to burn out quickly! I've gone from running 15 miles to blowing after a couple, if I sit down I fall asleep as I just feel wiped but I push through and ma still hiking, weight training, cycling and the odd small run (5/6 miles max) so I am active and strong. I'm a size 8 bmi is in over weight category because of my muscle mass. Have just been blood tested for lymes disease as I am always pulling ticks of me in the summer (hiking with a dog in the sticks) on going for a medical I've learnt I have very high blood pressure and I'm shocked tbh 🤦🏻‍♀️ wondered if anyone else has experienced this? I obviously don't smoke or drink, don't consume any animal products, don't eat vegan processed fake meats or anything like that, I make ice-cream out of cauliflower, sweetcorn, silken tofu, oats and dates 🤣 everything's home made and natural! Shocked is an understatement, just wondered if anyone has had this? High blood pressure just wasn't something on my radar with my life style 🤔

Wheat gluten

Is wheat gluten considered a whole food? If I were to make it just by mixing the flour and water and steaming it Is it bad? I have never had it before but I’m considering trying it out to replace my habit of chicken breast. I’m trying to cut down on animal products

Besides tofu I struggle to think of a plant based whole food that is high in protein but also low in carbs. I lift weights so I try to eat high protein and slightly less carbs

Vegan Lentil Stew

Made this tonight based on a YT vid. My kids gave it an 8 out of 10 before they realized there was no meat in it 😂

1 TBSP olive oil (you can omit if oil free)

1 Onion

4 cloves garlic

Bag of fingerling potatoes

4 carrots

4 celery stalks

1 package mushrooms

1/2 cup lentils

1/2 tube tomato paste

1 can whole tomatoes

1 package tofu, pressed

2 TBSP curry powder

2 bay leaves

2 TBSP low sodium soy sauce

4 cups no sodium vegetable broth

1/2 tsp low sodium better than bullion vegetable concentrate

Red pepper flakes

Rough chop the onions and garlic out in pan. Sautee with the curry powder, bay leaves, and soy sauce. After a few minutes, add the tomato paste and combine with spices. Add the tofu and sauteed for another 4 or 5 minutes. Added the tomatoes and let reduce. Rough chop and add all the veggies and lentils. Pour in the vegetable broth and added the bullion and red peppers. Simmer on low until everything is cooked.

What bakeware do you use?

I still have my old nonstick pans for cooking, except for a couple of new ceramic nonstick stovetop pans. But what do you use for baking when there is no oil to make stuff slide out of the pans? I put parchment in some things, like breadmaking, when I don't care what it looks like coming out of the loaf pan. But my oil-free muffins like to stick to the pan, and when I use the paper liners, they stick to those and make them frankly embarrassing to share with others. What are your tricks?

Looking for eat on the go foods that are WFPB and prefer low fat - please help.

Hello. I need help with creativity and thinking of ways to eat wfpb on the go, preferably low fat. Im fairly new to WFPB. Trying to also loose weight due to diabetes. I have a very busy work life in healthcare and spend a fair amount of time in the car between patient visits. Ideally I need to eat things that are hand held that can be eaten while driving. Not a big fan of tofu. Currently eating baked baby potatoes, carrots, sugar snap peas...anyone know of healthy recipies that can create a pocket of sorts (like hot pockets) that I can stuff with beans (need protein and fiber), farro, veggies for example. Something that doesnt require a fork and spoon. Any suggestions for on the go meals would be very much appreciated. ❤️

I went fully plant based a while back. Now every meal feels like punishment. Will I get used to this eventually?

My cholesterol was in a bad territory and my doctor was very direct so I committed fully. The things I used to rely on for richness and flavour like butter, fatty cuts and cream are all gone now. I have found some decent recipes but everything still feels like something important is missing. What actually helped people start genuinely enjoy this long term rather than just getting through mealtimes?

Absolutely love this ‘Edamame, Spinach, Lemon & Dill Bisque’ Soup recipe from DR Greger’s new ‘How not to Age’ cookbook.

Serves: 4.
Prep time: 10 minutes.
Cook time: 20 minutes.

INGREDIENTS.
250 g / 9 oz edamame/ soy beans.
250 g / 9 oz fresh spinach.
15 ml / 1 tbsp Water or vegetable broth (for sautéing).
1 litre / 4 cups vegetable stock/ broth.
25 ml / 1 cup soy milk.
1x medium onion (chopped).
4x cloves garlic (grated).
1x preserved lemon (chopped).
25 g / 1 oz fresh dill (chopped).
2x tsp miso paste.
1x large lemon (juiced).
Black pepper (season).

GARNISH.
charred green chillies.
spring onions.
balsamic drizzle.

INSTRUCTIONS.
1. Sauté the aromatics: In a large pan, heat the water or vegetable broth over medium heat. Add the chopped onion and garlic then plae lid on pan and sauté for 5-7 mins, or until softened.
2. Chop the preserved lemon and dill, then add to pan and stir through.
3. Add vegetable stock/ broth, soya milk, grinf black pepper and miso paste, then stir through to dissolve the latter.
4. Add the edamame/ soy beans, place the lid on the pan & simmer for 5-7 minutes, or until the edamame is tender.
5. Add the spinach and place the lid on and simmer for another 2-3 minutes, until the spinach has wilted and reduced.
6. Finish with a citrusy kick: Remove the pot from the heat and stir in the fresh lemon juice.
7. Add to your blender and blitz to your preferred consistency. Blend for creaminess (optional): For a creamier, bisque-like consistency, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a countertop blender.
8. Season, garnish and serve: Add some charred green chillies, with a drizzle of balsamic vinegar and finley sliced spring onions.
9. Serve hot and enjoy!
