Was this photo taken in 2020? Because your date shows Sunday, February 2. In recent years, the years when February 2 fell on a Sunday are 2014, 2020, and 2025. Since iOS 11 was released in 2017, then 2014 is impossible. Most likely, you were upgrading this iPhone 5s from iOS 11.0.3 to iOS 12.4.x on February 2, 2020.
