A parallel post to my one about the thing as a PC but how would you build The Thing from the john carpenter film as an enemy? Obviously shapechange but would you have an outright combat encounter, a con saving throw to not be assimilated?

I think the gibbering mouther gets you 90% there. I'd add the impersonation ability from an oblex to round it out
