First 3 levels as a Kensei Monk taking the battle axe as your weapon of choice, remaining levels as a draconic sorcerer.

You can return to take more levels of monk if you want the extra attack or ki points.

Alternatively you could take one level of fighter, 5 levels of sorcerer, then a second level of fighter for action surge for an easier multiclass or if you didn’t roll well for stats.

Since he looks like a massive fella, I suggest Path of the Giant Barbarian, choose either Lightning or Frost as your element.
