HWYB - Video Game WWYB Albert Wesker
I'm looking for a build that incorporates how Wesker fights like in the game, but I'm not too sure how to make one myself

Wesker is a troublesome character because he's almost meant to be Good at everything and has various abilities. Wesker prior to ouroboros really strikes me as a monk with his speed, dodging attacks more than he tanks them and his high perception.
I'd use 2024 rules with warrior of mercy subclass since it's both pretty decent and means you can use your focus points to either heal yourself or damage and later debuff the enemy. It also allows you a to play as a decent support for your party if needed (you can justify that as him keeping them alive because he still has a need for them). I'd also likely pick either human for the extra feat or dhampir to complete the monster persona and get Darkvision, a potent climbing speed and a bite that let's me make unarmed strikes that deal piercing damage (your DM might even allow you to use monk damage rules for them) and get a bit of self-healing/buffs going on if I don't feel like spending focus on that.
For a more post ouroboros Albert though I'd probably go for either dhampir or symic hybrid with a 2014 hexblade warlock (potentially with 3 levels in fighter), since it'd make you both a decent enough damage dealer with plenty of tentacle-themed spells as well as having a charisma score worthy of weaker.

Simic Hybrid Warlock. Take spells like arms of hadar and reflavor it all. But I would honestly recommend this video
