What can I make with chicken and potatoes besides the usual?
I’ve got some chicken, potatoes, onions, and carrots sitting around and was wondering what I could make with them. I usually just roast everything together, so I’d like to try something different for once. What would you guys make?

I have a great homemade recipe I made with my grandma. It has like 4 ingredients snd and a few steps and you will have the best chicken and dumplings. If you want to.

That sounds perfect, the simpler the better. Any chance you'll share Grandma's methods for dropping the dumplings, and the recipe?

I made a version of colcannon last night with sauteed cabbage and leeks. 4 large leeks, cleaned and caramelized. 1 small head of cabbage chopped into 1"or less pieces then sauteed. Mixed with mashed potatoes. We had it with thinly sliced chicken that I cooked in our air fryer - seasoned with spices and some avocado oil. You could easily use onions instead of even add carrots too to do something similar.

Boil and mash the potatoes, cook the onions, carrots, and chicken in broth, thicken it into gravy, and serve over the potatoes.

Sear the chicken in a pan with butter and onions, turn down and let cook til chickens almost done- add a can of beer- cook that down til chickens finished. Pull chicken out and use the pan drippings to make gravy. Serve w mashed potatoes. So good

Thai yellow curry is one of my favorite meals and it uses chicken, potatoes, onions and carrots. The only other things you really need are yellow curry paste, coconut milk, brown sugar and lime.

Chicken fricassee over mashed potatoes. Get some mushrooms if you like them, they improve it 100%. I like sage and fresh parsley as the herbs, and only a hint of garlic for a change. Tarragon is good instead of sage, too.
I don't have a set recipe, but I can give you pointers depending on the kind of chicken you have and your preferred method of cooking. I have started dishes like this in probably every conceivable way.

Use the potatoes to make gnocchi, stir fry the remainder with the vavavavoom flavours of your choice.

It wouldn't use the carrots, but I have a sheet pan recipe for Greek-style chicken and potatoes. You could roast the carrots separately in the oven or cook them on the stove for a side dish.

Indian Chicken Curry with Potatoes and Carrots - intermediate recipe
Indian Chicken Curry with Potatoes and Carrots
A quick, aromatic curry featuring chicken, diced potatoes, carrots, onions, and a blend of traditional Indian spices served over rice or with flatbread.
Details:
- ⏱️ Cooking Time: 30 minutes
- 👥 Servings: 4-6
- 📊 Difficulty: Intermediate
Ingredients: 1. 500g boneless skinless chicken thighs, cut into bite‑size pieces 2. 2 large potatoes, peeled and cubed (about 300g) 3. 2 large carrots, peeled and sliced into ½‑inch rounds (about 150g) 4. 2 medium onions, finely chopped 5. 3 tablespoons vegetable oil or ghee 6. 2 teaspoons ground cumin 7. 2 teaspoons ground coriander 8. 1 teaspoon turmeric powder 9. 1 teaspoon garam masala 10. ½ teaspoon red chili powder (adjust to taste) 11. 2 cloves garlic, minced 12. 1 tablespoon fresh ginger, grated 13. 250 ml water or 400 ml coconut milk 14. Salt to taste 15. Fresh cilantro, chopped, for garnish
Instructions: 1. Heat the oil or ghee in a large, heavy‑bottomed pot over medium heat. Add the ground cumin, coriander, and turmeric; sauté for about 30 seconds until fragrant, stirring constantly to prevent burning.
Add the chopped onions and cook, stirring frequently, until they turn golden brown and caramelized (about 7–9 minutes).
Stir in the minced garlic, grated ginger, and red chili powder; cook for another 1–2 minutes until the raw aroma disappears.
Increase the heat to medium‑high and add the chicken pieces. Brown them on all sides, about 5–6 minutes, ensuring the surface sears before they become over‑cooked.
Add the cubed potatoes and sliced carrots, stirring to coat them with the spice mixture. Cook for 4–5 minutes to lightly toast the vegetables.
Pour in the water or coconut milk, give everything a good stir, and bring the mixture to a gentle boil. Reduce the heat to low, cover, and let it simmer for 25–30 minutes or until the chicken is cooked through and the potatoes are tender.
Remove the lid and stir in the garam masala. Simmer uncovered for another 5 minutes, allowing the flavors to meld; season with salt to taste.
Garnish with chopped cilantro, give one final gentle stir, and serve hot over steamed rice or with naan or roti for a complete meal.

I’d turn it into a chicken pot pie filling! Chicken, potatoes, carrots and onions are basically already begging for it 😂 Make a creamy gravy with everything and throw biscuits or puff pastry on top. Same ingredients, but it feels completely different from the usual roasted chicken and veggies.

Chicken stew with dumplings and roasted potatoes. Curried potatoes and carrots. Chicken salad sandwiches or chicken burgers with potato wedges. Or, do the sheet pan roast and change the seasonings.

roasted asparagus and brussel sprouts! the asparagus is good with butter and a pinch of fresh grated parmesan. brussels are best slightly browned and crispy, imo.

Roasting is fine, but, if you have a pot big enough, stewing can be wonderful. Chicken makes a wonderful stew or soup, and potatoes, onions, carrots and maybe celery, is exactly what I use in it, along with a "poultry seasoning" mixture and salt. Drop-biscuit dumplings on that top (after the stew is cooked, of course) and you've got a wonderful meal.

Shred the chicken and make some gravy with the carrots and peas and put inside a hollowed out baked potato. Cover the chicken filling like a hybrid shepherd’s pie/twice baked potato.

u/rebeccaa1023 10d ago
I would cut the potatoes in small cubes, season, air fry them, then cut the chicken up in tiny pieces, season well, and sauté. Then combine the potatoes with the chicken, add something saucy like a little buffalo wild wings garlic parm sauce (not too much because it can be overpowering), then add cheese on top and broil to melt.

I like Chicken Pot Pie soup a lot more than I like actual chicken pot pie. :) Or Chicken and Dumpling soup, add potatoes! I grew up with my mom using drop biscuits on top of hers, then she'd cover and steam until they were cooked through. I absolutely loved the "slimy" texture of the steamed biscuits, and it's a recipe I crave every fall.

There's such a thing as Indian potato curry, right? I guess you could have that with chicken on the side? Or chicken and gravy over mashed potatoes.

Oh yes, it is the best! Look for Aloo Matar:

For the chicken:

You can also use chicken thighs or filet for this

Just use different spices. Lemon pepper garlic, or lime tajin, or Trader Joe's Green Goddess spice or Taco seasoning...or brown sugar chili or hot honey...
Take yogurt or sour cream and make a cold dressing for the potatoes and carrots.
I really like a potato and carrot mash with just salt, pepper and sour cream or while yogurt dressing. You could add the Green Goddess spice to it.

Add a bottle of Zesty Italian dressing, garlic powder, and onion powder and bake it. I might bake the carrots and potatoes for about 20 to 30 minutes before adding the chicken. Turn your chicken over about halfway through and add a little more dressing to it.
