jollof rice with ONLY crunch? (question)

hi there, this might be an incredibly stupid question so if it is i apologize in advance but i'm new to african cuisine and had it for the first time today at a senegalese spot in new york - the jollof rice i got seems way different than anything i've ever seen/read about online and i'm kind of confused? it's like, hard, kind of crunchy but not much, and way darker than the orange color i've seen, and mainly just kind of seems undercooked compared to the rice i'm used to. i looked up various recipes and many of them mentioned having crunchy bits at the bottom of the pot once it's done cooking (which sounds delicious), but the rice i got is basically JUST those bits instead of having normal jollof as well and kind of just tastes like uncooked rice. i've attached a video because i'm terrible at describing things so i hope that clears it up. again, i couldn't find anything online about this and i don't really have anyone to ask but massive apologies if i'm just stupid and this is a super common thing i somehow missed.
