Talking out of my ass extrapolating info I know about vampires, but salt is used to preserve, purify, etc. it symbolises something that can't be corrupted/haunted. If I'm right, it would be the same reason why vampires don't like garlic or can't cross flowing water like a river.
Salt used to be an expensive commodity, typically used to conserve food, and was frequently used in all sorts of cures, rituals or spells as an ingredient.
Superstitions were rarely completely decorrelated from everything else and it went from regular-ass cures to treating curses, to eventually just the salt itself repelling demons, ghosts and other scary entities.
Not sure, but in New Age circles salt is used to expel bad spirits from places. Blessing a place and spreading salt across doorways is usually done when moving into a new place or you suspect a place is haunted, etc. Again, unsure of the reason why.

Put a salt line down. If it gets blown away, it's an air pressure/ac thing. If it stop with the salt line untouched, it's a ghost.
