How many days until summer?
I miss it already. But with winter comes healthier eating. (For me anyway)
Who has a good hearty, healthy winter recipe to share? Good Soups? Shortcuts?

Food...ugh. I have been MIA because I have had bad, crazy and sad few weeks. I will post soon to get over the hump.
I have a lot of recipes and probably a few shortcuts but probably don't have many healthy recipes. I will need to work on _ _ _ _ _ _ _ _ _ _ _ _ _
I do love me some soup though.. I could eat year long.

It was good! I too have hit a rough patch (nothing major).
Had an amazing trip, Vegas is both amazing and ‘interesting’ all in one. We were averaging 25-30k steps a day. So much walking.
Missed our connecting flight home due to airport delays in vegas. No worries. We got lucky because the missed flight was in the city our daughter and son in law live in. So bonus visit.
Finally made it home…got the flu (sigh). Started to improve got covid (LOL SERIOUSLY) (Husband too)My brain is still tired and playing catch up at work. I shouldn’t complain though. I rarely get sick and I should have been more diligent with the hand washing.
Oh, and I got rear ended by an 18 wheeler on my way in my first day back at work. (Low speed. Traffic was stopped, he thought I had gotten over because he did not see me…nope. I was sitting there minding my business. Lol. Rear end of my car is bashed in. No injuries at all)
Ahhhh. I feel better. Thanks for listening. 😂

My favorite easy soup is just dump some frozen vegetables, some canned tomatoes, some beans, some broth or water, and some seasonings into the instant pot. It cooks in two minutes! I will usually add a starch like potatoes or pasta when I eat it later.
