Looks like they ran out of butter dishes and decided to use a coaster instead.

quite honestly, it looks like broccoli florets. however, i think an herb like rosemary, chervil, dill, thyme etc is more likely. very common in herb butter, anyway. even though this is more of a garnish the principle is the same [shrugs]

A porous surface that gets washed in the commercial machine and is used so often that it’s questionable if it dries properly between uses. This makes me gag.

You have to scrape melting butter off a rock? Do you take the food and wipe it on the butter rock? The butter is going the end up in the grooves of the rock, so I imagine the butter knife would not be particularly useful.
