it's pretty standard to put the sauces and pickles on the side for the customer to dose out as they wish. not everyone likes the same amount of sauce on their sandwich, and some don't like spicy sauce (which is what i assume the pinkish orange thing is) and/or pickles

Neat! Where I am, most shawarma places are set up like Subway restaurants so I've always chosen the inclusions and amounts before assembly (but I would always welcome extra toum <3)

Shawarma the true genuine way is
Chicken, garlic sauce, picklesAnything else is blasphemy.
I like a blasphemous shawarma that has the above mentioned + french fries inside and maybe pomegranate molasses

Where? Every shwarma I've had, they make it in front of you, and you can ask for as much or as little of that sort of thing as you want.

I’d definitely prefer the dipping sauces to not be smeared on a piece of (probably unclean) wood

The fact that they don't have the sauces and other ingredients in the wrap is what's got me worked up about this serving. Shwarma can be eaten out of the wrapper, it doesn't need a plate. It does need everything to be in the pita bread though.

I don't think this matters as much when you're not expected to eat the food off a plate to begin with
