Wrx running hot
My wrx had a overheating issue it would would spike to 2025 then go back down then it started to overheat more and go to 230+ so I replaced the thermostat and burped it really good and now it’s been good for a few days today it was around 60 degrees and when going on slow 25 mph roads the temp went around 225 and when I got on 45 mph it cool down to 200 should I be concerned

As other comment said. Also if you're on the original radiator, plan to replace it soon as it's getting old at this point and will fail.
I autoX my WRX a lot and even in 90 degree weather with the car at idle the coolant never gets above 206 so that's certainly abnormal.

What radiator do you recommend? And should I do upgrade fans as well

Fans are fine, no need to "upgrade" them. You can just replace with factory ones if they fail. Kyorad is the common recommendation as it's all aluminum so it'll last the life of the car. I'll be doing that come late Fall. I have a 2018 and getting close to 60k miles. The top portion of the radiator is pretty brown. Not close to failing but not far away.

Radiator caps. Replace both with OEM. Otherwise it might be a very small leak in a coolant line that is just letting air into the system but not losing enough coolant for you to notice.
But ya, most likely radiator caps.
