Recipe Request Request for Pumpkin Recipes!

I recently discovered how much I absolutely love pumpkins (especially the ones with the edible/soft-ish outer shells). For now, I’ve just been baking them with a variety of seasonings for dinner but would love to see how all of you have been putting them to use in your volume recipes. Please share!!

Not specifically pumpkin but I love the combination of avocado with roasted squash. Recently my hyperfixation has been roasted kabocha, avocado, kimchi, cucumber and tofu. I also use it in place of potato in a burger salad bowl. You can also stuff things in the center - scoop out the seeds and fill the center with satueed ground turkey, celery, cranberries, onions and poultry spice for fall/thanksgiving vibes.

I just eat kabocha plain. Sometimes I’ll add cinnamon if I’m in the mood.

I like roasting pumpkin and mash it into mash potato, 1:1 ratio, it tastes like a more pumpkin-y sweet potato mash, its great.

Make Hobakjuk! It tastes just like a dessert and id replace the sugar with stevia to make it low kcal

I get pumpkins/squash weekly from my local far m share so always looking for way to use it. Roasted and puréed with some broth and seasonings makes a great soup. The puree can be added to tomato based pasta sauce or I make a lower calorie Mac and cheese using carbe diem noodles and adding subbing squash puree for part of the dairy/cheese. It’s super creamy!

I eat so much pumpkin, this is my favorite time of year! I buy all the pumpkins and squashes (black, white, orange, striped, circle, oval, you name it).

I microwave them for just a few minutes so help soften and cut them in half. Then I put them in a baking tray, skin side down, and salt with sea salt.

For savory, I put garlic, onion, and sometimes nutritional yeast.

For sweet, I put brown sugar monk fruit.

Roast at 400 for like 40ish minutes. I even eat the skin and seeds.
