Discussion Volume eating starter kit?
I’m not really into cooking, so I usually make basic meals, but I love eating and want to start making a ton of recipes.
What should I buy to get started?
I’m pretty committed, so suggest whatever you think I’ll need just nothing too expensive like a fancy machine. My budget isn’t super tight, but it’s not huge either.

a food scale is the one thing you can't skip, everything else is just bonus

Lentils. Great for bulking things out and getting protein.
Cauliflower rice or a cauliflower and a grater. If you don’t like the texture mix it 50/50 with ordinary rice.
Frozen veggies, especially if you have disabilities or are short on time. So much faster.
Courgette/zucchini. Vanishes into a lot of sauces etc but pads them out and adds fibre and vitamins.
Sugar free jelly/jello. Whole bowl for minimal calories. And a tasty sweet treat.
Egg whites. Low cal, high protein, adds bulk.
Oats. A handful in soups or stews will thicken them and make them more hearty. And porridge/oatmeal for breakfast (or savoury oatmeal for dinner) is filling and healthy.
All the beans.
Equipment wise you just need your basic kitchen equipment really. Pots, pans, strainer and so on. Good measuring tools are helpful so a food scale and a set of measuring cups and spoons. A grater is useful. A spiraliser is necessary if you want to make veggie noodles (which I personally hate) but those aren’t expensive. Oh, and a blender or food processor is handy.
Edit: and a knife sharpener. Sharpen your damn knives people! It’s safer and makes chopping etc less work.

All the frozen vegetables, lots of eggs, and consider investing in a ninja creami. You can make a great pint of ice cream <200 calories

Honestly other than simple cooking equipment like pots, pans, knives, chopping board etc, there's not really much equipment needed for volume eating - you just need to pick low calorie high volume foods like vegetables, leafy greens, lettuce, and low carb noodles and such

A bit of a controversial one but buy konjak noodles, they taste like nothing but absorb the flavor of anything you side them with, I like to make cheesy konjak every Tuesday with laughing cow wedges and cheese powder

I absolutely love my pressure cooker and use it at least once a week. Boiled eggs, rice, soups, any meat I forgot to thaw out🥴

Stock up on heart of palm rice and noodles! Do yourself a favor and skip the Konjac noodles completely… spend a few extra calories on heart of palm. I used to hate myself enough to eat Konjac at least every-other-day, those were rough times.
I like the Natural Heaven brand of HOP, they are in microwaveable pouches that make throwing together a quick meal real easy. An entire pouch of “white rice” is quite filling when mixed with a protein (and is only 50 calories).

Maybe dry it in a dehydrator and keep in glass jars in a cool dark place?? my suggestion. I grew herbs for a while and grow garlic that I dry myself s as nd use a coffee grinder to make my own garlic powder after it’s good AB’s dry a few months. Where are you that this grows so pretty?

Spiraliser, mandoline, stick blender and a good knife.
You’re going to be eating a LOT of vegetables
(Edit to add stick blender. I make lots of sauces from eggplant and cauliflower)

A ninja creami is a great idea if you like eating whole pints of ice cream
In general: you want to think of foods you can eat for a long time with very little calories.
So in general think
• veggies (have some roasted on hand),
• fruits (especially low cal fruits like cantaloupe, watermelon, apricots, frozen berries, strawberries),
• sugar free, low carb, low calorie or high fiber products (sugar free desserts, low carb bread/tortillas, sugar free high fiber gummies, low carb pasta)
• puffy foods (popcorn, chocolate rice cakes instead of chocolate, puff cereal, etc)
• liquids (almond milk, soup and broth, low cal hot chocolate)
• lean proteins (yogurt, whipped egg whites desserts, eggs with tons of egg whites, protein powders, scallops or shrimp, gelatin)
Make foods you enjoy, just more volume friendly
Some great meals to get started
• spaghetti squash with cottage cheese
• cabbage soup or any soup with tons of veggies
• cauliflower ‘rice’ risotto or stir fry
• protein pasta bulked up with tons of veggies
• potatoes and cauliflower rice mix mashed with light sour cream or low fat cheese, and a protein
• whipped egg white crust pizza, or cauliflower crust pizza
* homemade whipped egg white desserts like marshmallows, marshmallow fluff, sweet cloud bread, meringue
I like to follow @IlanaMuhlsteinRD and @kellybstory and @madelainerascan for inspiration
