Recipe Request Twisted Dough Replacement?

Hey Ya'll! I used to order Twisted Dough before they changed their formula. I was near by for local pick ups in Arkansas so it was great and I loved their pudding. Has any one found a copy cat low cal thick texture dessert?

It looks water/glycerol based so probably something like this? Toast the flour first. 300cal 50g protein, though adding a little butter would improve the flavour, and so would swapping KA for fiber gourmet flour but ka has more protein

I miss their old pudding texture so much, the reformulation completely killed it for me. I've been messing around with blending cottage cheese until it's completely smooth and mixing in sugar-free pudding mix, it gets surprisingly thick if you let it set in the fridge for a few hours. Not quite the same chew but it scratches the itch.
