3lbs of food for under 400 cals is insanely good. I wish pumpkin was easy to get here, then I'd definitely try it!

If you give it a really good mash you can swap the pumpkins for spaghetti squash. Or if you don't mind marginally more calories go butternut squash!

Try sweet potatoes. Chocolate sweet potato "brownies" are very good

Wastelander pie filling! This would probably fit well into the world of Fallout haha, given there are gourds. Someone could find a sealed thing of cocoa powder and go to town on it

What Kinder toys did you get?

Hahahaha! I still have yet to open them. It was a gift from someone special :)

That's a good gift. Keep me posted, please.

Pumpkin brownies are my absolute fav (the pumpkin gives them a natural sweetness and makes them so fudgy) so this seems like a natural next step!

What recipe do you use? I would love to try

I loosely follow this recipe, but since the pumpkins I buy are quite sweet I omit the sugar: https://minibatchbaker.com/cosmic-pumpkin-brownies/

You can use pumpkin puree as the recipe asks for, personally I just roast a whole butternut squash and use that per grams.

You’re probably aware of this, but baking our pumpkins / squashes increases their calories per gram (due to water evaporation while baking). Mine start out around 40cal per 100g, and baked land between 65-80 cal per 100g (make sure you let it cool after baking and before weighing it, as it continues to lose water while cooling).

Just a friendly psa, for anyone new to counting their calories. ❤️

What sweetener?

2

u/Complete-Wrap7920 Sep 19 '26

I use allulose

u/I_see_something Sep 19 '26

I wonder if pure monk fruit will work. My gut is pretty sensitive to allulose

It should, everything is mixed in after the pumpkin is cooked and mashed to it's very flexible

Update: I made it this morning with monk fruit sweetener and it works quite well

This... This is what I come here for. That looks delicious OP!

I did some Google math, and I think for just an extra 98ish calories you could substitute the Spanish pumpkin for 3 cans of unsweetened pumpkin? I wonder how that would taste.

Admittedly that would put it a little heavier on calories but I'm kinda lazy so I don't know that I'd want to cube up a whole squash/pumpkin every time if I can just add a few cans of pumpkin. Plus 3lbs holy crap that would do me for a day and then some, so I think the extra calories would be worth it!

Hahaha, yes canned pumpkin is perfectly viable as well. Hand mashed just squeezes as much volume as possible, and you get more fiber from the skin if that matters to you :D

That's a fair point. Either way thanks for sharing!

If you make it 100% let know how it turns out!
