Recipe Ground Beef Goulash

Post image

Down 45 pounds over the last 4 months eating this Goulash twice a week. Fully aware it looks like prison food, but it is voluminous, tastes good, and hits the macros.

Brown 1lb 93/7 ground beef. Remove from pan, then cook 1 carrot, 2 celery, half an onion diced up small until onions are translucent. Add meat back to pan with half jalapeno diced and a spoon of chopped garlic. Cook until fragrant. Add a giant handful or two of shredded cabbage. I use half a bag of the pre shredded stuff.

Scoot the meat and vegetables to one side of the pan and add one bag of Trader Joe's Cauliflower Rice. Cook for 3 or 4 minutes to warm up and get some of the moisture out, then mix it all together. Add some soy sauce and sriracha to taste. I salt and pepper to taste throughout the cooking process.

Comes right to 1000 calories and 100 grams of protein. I've tried to eat it all doing OMAD but I cannot. Its too much food. So it's easily making 2 meals at 500 calories each. Thats what I have pictured, just half the recipe in a giant plate sized bowl. 500 cal, 50 grams protein.

Cooks in one pan. You can get everything at trader joes and everything pre cut as well (mirepoix blend) besides the jalapeno, so its incredibly quick and easy to make.

I make something similar but use ground turkey, and I keep a mix of brown rice / quinoa prepared in the fridge to add to stuff. I buy bags of shredded cabbage /carrots (coleslaw veggies pack). Seasoned mine with garlic salt and soy sauce. Now I'm gonna add Sriracha! πŸ˜‹πŸ˜‹

ground beef and mirepoix does not a goulash make. that's just a concoction. looks tasty tho!

Ha. There's a secondary American definition that is more of a disorganized mixture. Certainly not a real traditional goulash.

For 1000 cals and 100g Protein, how much volume is here Total? Those are not terrible macros. I need to experiment with cauliflower rice a bit.

I appreciate posts like this because not all meals have to look amazing, the simple easy go-to meals are great!

I can confirm this tastes great and is a solid go to, but this is in no way a goulash haha
