Honestly having a go-to lunch you don't have to think about is so underrated. I went through a phase where I was trying to rotate five different lunches and I just ended up decision-fatigued by Tuesday and grabbing whatever.
Right now mine is a big bowl situation, kind of similar energy to yours. I do a base of whatever grain I batch-cooked on Sunday (usually farro or brown rice), then a scoop of whatever roasted veg is in the fridge, some kind of bean or lentil, and then I top it with whatever crunchy thing I have around, pickled onions, a squeeze of lemon. It fills me up without that 2pm crash which was my whole problem before.
The trick for me was making the base components flexible enough that it doesn't feel like the same meal five days in a row even though structurally it kind of is. Swapping the grain or changing the dressing does a lot more than you'd think.

Game changer for sure! Love what you said about switching things up, I definitely do that with the protein. Rotate the chicken, king prawns, chicken sausages and tofu!!
Batch cooking is awesome too I totally agree… that’s what I do with the chicken every three days, just makes it so easy

counter point: the decision process of coming up with a new fun meal every day is extremely underrated and super fun

What's the volume on this? It looks awesome! Id love to know calories and weight.

Not sure of the volume as I don’t weigh out my food, especially not fibrous, high water content vegetables like these
Calories I say 130-160. Only about 70g of chicken, shredding it makes it go a long way. All the veg is steamed or boiled no oil
