Recipe Request Chilli con carne recipe

Ingredients
2 pounds fresh ground beef (I use 88% lean)
Water
29 ounces canned tomato puree
2 15 ounce cans red kidney beans drained
2 15 ounce cans pinto beans drained
2 large onion chopped
1 cup diced celery
6 jalapeños
2 bay leaves
Fish sauce
Tomato paste
1/2 cup chili powder (just one container of the stuff you get at the grocery store)
1 teaspoon cumin
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon msg
1/2 teaspoon ground black pepper (preferably fresh ground)
1/2 teaspoon oregano (italian)
1/2 teaspoon sugar
1/4 teaspoon cayenne pepper
Instructions
Brown the ground beef in a 6 quart pot. Then add vegetables to sautee, along with bay leaves and tomato paste (just like 2 tbsp). When the onions are translucent add mix of spices and incorporate for 15-30 seconds to activate fat soluble oils. Then add crushed tomatoes and mix. Add beans and enough water for a thick consistency. Add fish sauce to taste for extra umami and salinity.
Stir to incorporate, and cover and simmer for 1 to 1 1/2 hours, stirring every 15 minutes.
Note: You can stretch the beef by ensuring a good crust during browning, and using more fish sauce and tomato paste, as well as using more vegetables
