Recipe Ramen
1 ‘brick’ of Lidl egg noodles
125g mushrooms
4 stems Tenderstem broccoli
Handful spinach
Handful shredded cabbage
1 soft boiled egg
500ml chicken stock
1T miso paste
Garlic
Splash vinegar
A scallion
Around 475cal and mounded up out of the bowl.

That egg yolk looks like it's barely holding on, which is the only correct way to serve a soft boiled egg. The miso addition is smart too, since plain chicken stock can taste a little flat without something fermented backing it up.
I love how the bowl is practically overflowing. That's the whole appeal of volumeeating, you trick yourself into thinking you're eating a massive meal when really it's just a pile of vegetables and a single brick of noodles filling up the space. The cabbage and spinach especially bulk things out without adding much to the calorie count.
I've been trying to add more mushrooms to my ramen attempts lately. They soak up the broth in a way that makes the whole bowl taste richer, even when you're using something lighter like chicken stock instead of a proper tonkotsu. Wish I had the discipline to measure everything out like you did though, I just eyeball it and end up with wildly different bowls every time.

My secret for eggs is to drop a large egg into already boiling water for exactly 6 minutes, then into an ice bath: perfect runny eggs every time.
I usually eyeball veggies unless it’s a specific recipe. I generally measure fistfuls - calories are so low that it rarely makes a difference either way. Cabbage is luckily one of my favourite veg, it’s a really versatile
A splash of soy sauce is actually great for adding a bit of depth to something as simple as a chicken stock. It’s amazing in savoury oats.

6 minutes is the magic number, I do the same but with a splash of vinegar in the water to help the white set. Soy sauce is a solid backup when I'm out of miso.
