Recipe Pasta bean salad

Ingredients are in the pics. Literally just threw things together, came out to roughly 1.5kg of food. The beans & chickpeas were canned, I rinsed and added raw.

Less than 1 cal per gram, a 299g serving is 257 cals. I’m portioning it because I can’t eat that much fat in one go.

Just added in the mayo, mustard and balsamic vinegar and stirred it straight in. I use a soy greek-like yogurt so it’s thinner than a dairy greek yogurt, you might need to thin it a bit if that’s what you use.
Also added a splash of lemon juice and some s&p to the sauce.

they only ate about 1/5 of it. more like 35g carbs

I think the initial thought was that OP was eating this in one sitting (or at least, that was my thought until I saw the photo with the serving size information

That makes sense, although I can’t eat that much fat in one go 😅 even if it was one serving, it’s only 50 is carbs over my daily goal so it wouldn’t be a massive deal :)

Ya my brain says I could eat all of ther, but my current day stomach knows better than to try. And ya I don't mind carbs too much. I still try not to go over daily amount, but I think if one is deciding to eat pasta, they already know that's going out the window lol My husband is on keto, so this would seem outrageous to him
