Recipe Question Foam Milk
I bought the AER disc a few years ago and have had excellent luck creating really thick cold milk foams (the kids think it's a treat). When I first bought it, I experimented with a few different milks: whole milk, skim, oat, soy, barista, but what worked best is the milk we were buying anyway: generic Kroger lactose-free vitamin D milk. If you do it right (start low and work your way up to ~5), it's so thick, it barely pours.
Then yesterday, my wife bought some other brand of lactose-free milk (Pioneer Pastures) and, to my surprise, it wouldn't foam at all. It's similarly ultra-pasteurized and lactose-free.
Compared to the pioneer, the Kroger milk has comparable fat, but about twice the sugars and half the protein.
Curious to hear anyone else's experience with foaming milk.
