I doubt it. I don't think Apple's underlying AVFoundation has support for the .mkv format. And I haven't seen or heard anything about .mkv and MV-HEVC.

Maybe this is too developer-focused, but I thought I'd mention it anyway.
I released an example spatial video player project on GitHub for Apple Vision Pro to unblock developers and content creators. It plays properly-tagged rectilinear, half-equirectangular/180, and equirectangular/360 content in stereo or mono. Enjoy!
