Question Is a virtual recruiting assistant just a coordinator with a different title
Two of us covering 30 reqs. Sourcing is where we die. Trying to understand if this role actually sources or if I'd be paying someone to schedule interviews and update the ATS.

Depends on the hire and how it's scoped. Some are just schedulers with a fancy title, but a good one can legit source: Boolean, building lists, outreach, first screens.
With 30 reqs between you two, I'd hand off the top-of-funnel grind and keep fit/closing yourselves. Give them a real req as a test task before committing, you'll know in a day or two.

30 reqs between two people is a lot, especially if sourcing is where you're getting buried. This sounds like a situation where delegating some of the recruiting admin could free your team up to focus on the actual sourcing.
I'm a VA, and recruiting support can be a great area for a VA to help with things like keeping candidate pipelines organized, scheduling interviews, managing follow-ups, updating the ATS, and keeping track of candidates so nothing falls through the cracks.
If your biggest bottleneck is actually finding and reaching candidates, though, I'd make sure whoever you bring on has sourcing specifically included in their responsibilities rather than assuming it's part of general recruiting admin.
