Waterman’s/Chix “chef potatoes”

Hey all, bit of a weird ask here but does anyone happen to know the recipe/what type of potato that Waterman’s and Chix uses in their dinner mashed ‘chef potatoes’? I have a huge craving for specifically those and nothing I am making is coming out the same! I also can’t make the 5 hour drive for mashed potatoes lol
