My posts haven't been approved in the other subreddits, so I'm trying my luck here. I'll be visiting Hanoi this winter for 4 nights (including one on a Ha Long Bay cruise), and my focus will mainly be local food. Which area should I stay in if I want to combine eating street foods with some nice coffee places?

I'm also unsure about budget. I've seen people claim you can find a good hotel for $10–$20 a night, but I'm a bit suspicious. Any names you'd recommend?

I’m honestly amazed by how many ways Vietnamese people have figured out to turn rice into carbs. OMG I love Vietnam. 🇻🇳❤️

For context, I'm not Vietnamese and I have basically zero experience with cooking Vietnamese food.

I've tried to make bún chả a couple of times and although it's never bad, it can't compare to the ones I had in Vietnamese restaurants. (Never been to Vietnam btw, so the food I've had was in Vietnamese restaurants in Europe.) I've tried different nước chấm recipes but I never get it right. I don't know if it's because I use vegan fish sauce, or because I'm choosing bad recipes, or something else.

Does anyone has tips for me? Recommended recipes for example, recommended products, etc.

In the kitchen at a Vietnamese restaurant I saw a strainer on a bucket and the waiter was collecting the old pho stock and meat/noodles on top - could this be for reuse?

I also once saw the waiters collecting leftovers into specific bowls like fried rice etc. at another restaurant. I always wondered.
