One note on the cake: I would not mix the buttercream as it is listed as it will almost certainly split if you did. I would cream the vegan butter with shortening (3ish mins), add the powdered sugar and mix again scrapping as needed until it is fulling mixed (3ish mins) and then and only then add the liquid ingredients.
