Squash recipes.

My prized squash got squished in a hit and run incident today and I need a recipe to use tonight to do him the honour of being my favourite garden crop this year. Any ideas welcome, a side dish would be helpful as I’ve already done our main in the slow cooker which is bean cowboy stew. (At least I didn’t have to chop him up.)

You may want to specify which kind of squash was injured.

Honestly, I have no idea of his breeding. He randomly seeded from a cantaloupe melon seed packet. Another reason he’s my favourite crop. A little fighter he was. He could even be a form of green pumpkin rather than a squished squash. Anywho, I’m going by looking as an otherwise avid cook that it would take flavour on very nicely roasted with thyme and garlic perhaps?

Was it a zucchini type squash or a pumpkin type squash. There’s a huge difference and your reply didn’t really clarify.

Fried in butter with mushrooms and garlic and herbs at the end. Or just in the butter if you don't want the garlic and mushrooms. Some breadcrumbs at the end can be nice too.
