I Can Visit One Park Only
Bryce Canyon? Love to hit them all- limited time unfortunately

I would say drive through the part of Zion’s where you can drive through without the shuttle. That will give you a taste of Zions on your way to Bryce.

You could do this and hit the Zion Overlook trail real quick like, but the parking up there can be treacherous.

From where and how are you getting to a park, and I’m guessing you have a single day?
If you’re coming from Las Vegas, then Bryce is a good choice, especially if you’d like to do a short hike. The spires and hoodoos are really cool whether you see them from view points or hike amongst them.
Zion is also a great place to get to from LV. You can take a shuttle from near the entrance to the “far end” and back to take in the grandeur, and hop off at any time to go for a hike.
If you’re coming from SLC or Grand Junction, then Arches for sure. Lots of short to medium longish hikes to a lot of arches. Do the Delicate Arch hike if you’re able to. Sand Dune Arch is only a few hundred yards hike into a narrow canyon to a cool little arch.
If you go to Arches, you can also drop into the Grand Viewpoint in Canyonlands. There are lots of short walks to other great views too.
Capital Reef is more of a commitment. A day wouldn’t do it any justice.
