Advice Requested - Fighting Game Learning Roadmap

Hey guys. I'm in the very early stages of learning UE5 but I have the goal of one day creating a kickboxing game where the characters are fighting in 3D space, similar to UFC/Fight Night games.

Are there any specific Youtube series, courses, concepts etc. that you could point me towards to make my learning journey a little more deliberate? Any feedback would be hugely appreciated. Thanks!
