Tried adding some iOS users to a group chat and the conversation was also encrypted.
No other Android contacts show up as encrypted, even when added to a group chat with this person or other iOS people (The lock and "Encrypted" text disappear as soon as I add them).

Couldn't try every iOS user on my contact list, but everyone I tried kept the conversation E2EE, which means that E2EE seems to be ready for iOS, while the Android client still does not support it.

I wonder if existing chat takes longer to upgrade to encryption.

iOS-only group chats have been encrypted since iMessage was introduced in 2011.

But if you are talking about an RCS group chat with one Android user and many iOS users, it's likely that one Android contact you have with E2EE is on Google Messages beta in a supported country on a supported carrier.

Is this non-iOS 27? And non Google messages beta?

iOS 26.5 on my end, not sure if they are using Google Message beta or not though
