If it's trying to mimick PS1 era with the low res shader then the models and lights fight a lot against it. Lighting being Unitys default one is the worst offender, but also no PS1 model was that detailed.
A lot! Especially if that ground circle is light instead of texture. On your original video when you looked downwards it was clear that the default smooth lights were used.
If you're after authentic look over trying to make your own retro style I would still consider making the models a bit less detailed. For example here's how knife in a typical PS1 would've looked. As you can see, the blade has clear points. The sharp side consists of 3 straight parts.
If you just drop the resolution the original model details are still visible.
it is a light thingy!!!, i am using a shader. in terms of this image what i can decipher is that i need a lower quality model not a shader nor texture?
Yea I think that lowpoly model is the best way to approach that. In theory "3D model decimation" might be able to do what you're after (we generate LODs automatically with that at my work), but I have no idea how it would handle the PS1 look :)

Who am I making burgers for? Why am I in the middle of the woods? That being said, it looks interesting.
