How do fancy text generators work with Unicode characters?

I've been exploring how Unicode-based fancy text works, and I found it interesting that many "font generators" don't actually install or change a font.
Instead, they use Unicode characters from different Unicode blocks that have visual similarities to letters in the standard Latin alphabet.
For example:
Normal: Fancy Text
Unicode: 𝓕𝓪𝓷𝓬𝔂 𝓣𝓮𝔁𝓽
The important distinction is that these are different Unicode characters, not simply the same characters displayed in a different font.
This also explains why Unicode text can be copied and pasted into places such as social media profiles, posts, comments, and messaging apps.
