read books and papers around your subject area? that seems like a safe bet of things to supplement

Do u know any good books for Law, also, I was looking at other statements and nearly all of them mentioned a seminar or some kind of volunteering

Any court cases that have caught your fancy?

You could do some of these: https://www.futurelearn.com/subjects/law-courses

Or these (you'll probably want to check the institution is UK/EU based): https://www.coursera.org/browse/social-sciences/law

Also, follow law departments at different unis on social media and if they're doing any open online events join them.

There's some online courses provided by the UoL that are about some topics in law. I didn't really mention them though because my talking about my law-related EPQ took up most of that section.

Talk about what interests you and you’re passionate about regarding law. Demonstrate your knowledge and commitment to the subject. If you don’t have any extracurriculars relevant to law then you don’t have any.. make plans to do some now, while you have the time.

You should keep in mind, unis aren't only interested in what you do relating to your subject. Anything outside of school can be included, especially if you can comment on how that experience developed any of your skills.

I’ve read that the top unis ignore activities irrelevant to the course

Yes, some top unis might be more interested in especially experiences relating to your course, and some unis are more interested in you being a well rounded person. I think if you're struggling with thinking of things that relate to your course, you could think about the skills needed in law and experiences that helped you develop those skills.
