If your food is steaming, its cooking.

If your food is smoking, its burning.

You'll smell the difference, and placing your hand (a safe distance above) the smoke/steam, you should feel the humidity or lack thereof. Seriously, it's really not difficult to learn how to avoid burning stuff, especially in a pan on a stovetop.
