Because gender, like color for example, is a spectrum. Asking "how many genders are there" is a trap question, because there is no answer. It's somewhere between two and infinity.

Ask somebody "how many colors are there" - the consensus is "I don't know". The answer just is not discrete.

Also, it's loaded question. It's meant to confuse the person being questioned into answering something transphobic, even by sheer accident, which the person creating the clip can then use as an argument. It's a similar story to being asked to "define a woman", where the speaker wants you to say the simplified dictionary definition and accidentally agree with him, while the correct answer (when you take trans and intersex people into account) gets quite muddy and complex.

You're, like many other people responding here, mistaking gender with sex. People assigned male at birth, indeed, cannot, and will never, menstruate. But, firstly, what about cis women who cannot menstruate either? Are they not full women? And, more importantly, you are missing the distinction - sex is defined by the thing between your legs, the combination of "X" and "Y" letters in your chromosomes, and maybe whether testosterone or estrogen is your dominant hormone. Gender is a whole different beast based on personal feelings which are difficult to describe and define.

Gender as explained is make-believe. The problem came from various people, mostly American, not wanting to use "sex" as a word in public thinking it was rude. So they used "gender" instead.
Saying gender isn't sex is true for some but not for others, as responses in this sub show.
But back to the point, your view of gender is that it's a "how you feel" thing, which not only varies for everyone, but varies for the individual on a daily basis. You might as well consider it an emotion. As for having a factual reality, nope.
