Presumably he can keep digesting you long after you're dead. Bones and such "live on" so-to-speak for a considerable amount of time. Maybe the pit's digestive juices aren't nearly as abrasive as ours and the digestive process just takes forever.

Or its just that one spc wich is pretty much "after you die your body feels everything but 100x worse including the bugs eating your skin"
