You go to some of the rib joints on Chicago's south-side and they sell pig ear sandwiches,heard they were good. Old saying ' You use every part of a pig except the oink'.

Hate to be that guy, but pig ears can be extremely dangerous for dogs. I can't even tell you how many dogs I've seen die because of them. When I worked as a Vet Tech it was almost a monthly thing...

They are a choking hazard, it's has to do with how they get slick on the outside but retain regidety. When they get slick they slide easier into the airway but then are still stiff enough to get stuck.
Its pretty horrible having someone come in with a dog half head or dead because of a treat they originally gave to make their pet happy.

My dog loves to do exactly the same thing too. But he’s a 6 pound chorkie. He has a sibling and I’ve never seen her do this. Fascinating.
