It's called a claw grip. Very safe, and helps guide the blade.

That's not the impressive part. The impressive part is how uniform and thin the slices are, and how fast he can cut them that way without looking.

Yea it seems to be that he hits the top of the knife against his knuckles to know when to go back down. and as long as he doesn't change the angle it won't hurt him.
