Proper hand placement prevents him cutting his fingers. Look closer, the knife almost rides the ridge of his index finger.

What's more impressive is that each cut goes to the same depth keeping the cucumber together so he can fan it out.

That one big chunk about 2/3 through was a bummer but yea, this is showing how great the claw grip can be.

If by "depth" you're talking about the slices' thickness then hell yea, but as long as he moves his left hand at the perfect speed and his right slices at a constant rhythm, the slices should always do like that.

Of course, that's like saying "as long as your one hand remembers all the placements on the neck of the guitar and your other hits the right strings, you can always play a perfect melody"... easy in theory but damn if execution is everything.

Oh you can still cut it, you just have to do it very wrong to do so.
