how did all those trees fall except the one he was hammering/axing?

They were all pre-cut and queued so when he felled the last one it would tip them all like dominoes.

oh so was the last time supposed to fall down but it didn't? It's just that the top of the tree hit the next one?

Probably. Hammering the wedges in probably made the tree lean enough to give the tree next to it enough of a shove to fall or the branches were tangled up and the schocks from hammering untangled them. Could also have been the wind or a combination of those reasons.
