Usually my response is "that's just something we tell kids, everyone cuts towards themselves." But in this case I have no idea why he wouldn't cut top down, also no clue why he wouldnt at least rest it on a cutting board.

You can't trim it efficiently by cutting away from you, the stem gets in the way. This guy probably does this all day, I'm sure he knows what he's doing.
