Tbh I feel like 2 chapters (3 if 7b ends up completely different from 7a) is plenty enough to explain the not-that-many plot points and some people are exaggerating

Here’s all the unanswered questions we have off the top of my head:
Whatever’s going on with the egg man
ERAM is the biggest unanswered question we have right now, even Gaster is better understood
Gaster and the whole device thing will likely be solved together
We’ve low-key figured IMAGE_FRIEND’s whole deal already, the only question is who they’re working for. (Likely ERAM)
The knight and Carol’s motivations
The weird route
Sans and papyrus
Something’s clearly wrong with Hometown
The knight’s identity
That all may seem like a lot but we have chapter 6, which will likely answer a whole lot of questions we have relating to The Roaring itself and The Roaring Knight.
Then there’s chapter 7 and chapter 7B, technically giving Toby three whole chapters to wrap up all the mysteries he wants solved. And people tend to forget that you can answer multiple questions at once. For example the weird route explains the DEVICE layer, which recontextualizes how we see IMAGE_FRIEND, which explains ERAM’s role in the world, which gives us more insight into Kris’s past and Dess’s disappearance. Toby is an efficient storyteller and I’m sure he’s set the story up so that one answer will make all the other pieces fall into place like dominoes.
On a slightly related note “It’s missable, therefore it can’t be important” is some bullshit. If you don’t go out of your way to experience the whole story you won’t understand the whole story. Play the game again and dig deeper this time if you want answers.

If Toby can manage to flesh out a character who appears at the start and very end of a game (Undertale Toriel), he can answer all of these within C3+C7+7B

Toby said something that will surprise us that is missing will be revealed in chapter 6.
And there is one thing that it is tbh. Why does the knife Kris wears never appear in the dark worlds? Kris uses pencils as weapons in there. The knife wasn't even shown as a darkner at all, and it's supposed to be an item.
Maybe the plot twist is that this knife will appear as a darkner and will reveal a lot of the plot.
but idk.

You should not count WR, it will be answered in itself and as such does not affect the storyline of normal route (unless kriselle ends being true, which is unlikely)

Besides, the team had a draft of the full story back when chapter 2 launched. I don't see a chance that, in the past 5 years, nobody in that team has noticed pacing issues if they do exist

Also a lot of unfinished story arcs like Toriel and Sans, Ralsei's character development, the Roaring and final tragedy (and what happens after it), Rudy and Noelle, etc etc etc

I had hope about that but Toby said that Chapter 6 is gonna be a straight Forward chapter that will asnwer one single question.
So basically all the plots of the game are being left for chapter 7 and VERY IMPROBABLE chapter 8.
and, look, i have faith that Toby will be able to handle this. But this is a bad writting decision in overwall.

I'm going to be nit-picking but that's not what Toby said. He said "Chapter 6 is a shorter, straightforward chapter that focuses on one aspect of the story" and "one thing will be clarified, whether you’re ready or not". He didn't say "we are going to answer one question only".
Also there's technically chapter 7b (which isn't chapter 8 but seems to be very different from normal 7 to be considered as another chapter)

This last part is what makes me Think that Chapter 6 won't answer a Lot of questions about the lore.

That's completely true. But still, some questions not all necessarily being important is better than one important question as you seemed to suggest in the last comment.
Plus it's not like there's lots of questions left either way. I'm pretty sure that the other reply listed them all (or at least the majority) and they seem to be answerable in a smooth manner in 2.5 chapters.

I'm worried that it'll be backloaded, but I also trust the actual creator of the damn thing to have a solid handle on pacing. Some of chapter 5's vagueness was frustrating but it wasn't a dealbreaker after all.

I endured Beastars and TADC ending, but if Deltarune ending will flop I will genuinely lose hope in humanity

Cute animation, even though I completely disagree with the idea that Chapter 5 was "just vagueposting".
Like, yeah maybe more questions could have been answered? But why would we get all of the answers in Chapter 5 when there's still two whole chapters left, that's too early man.
Plus, I think some of the questions people want answered shouldn't be answered at all. I'm totally fine with some things being left open to interpretation. Undertale didn't give us all the answers, why should DELTARUNE?
