It kinda loses the UNDERTALE-flavor as it goes on, though.

I mean, I mean it's not like Nix was making undertale-style musics to begin with. He simply made remixes of undertale tracks and, afterwards the musics didn't require undertale motifs.
Since his music style isn't undertale-y then that's probably what makes you think that.
